Chicago’s foodie scene is abuzz with the recent announcement of Perennial’s—make that Perennial Virant’snew executive chef and partner, Paul Virant. As we bid adieu to chef Ryan Poli, we welcome in his place a man who has made his name prevalent in some of Chicago’s top restaurants (Charlie Trotter, Ambria, Everest and Blackbird) before opening his very own, Vie, back in 2004 in Western Springs. Virant, named Best New Chef by Food & Wine magazine in 2007 and Chicago magazine in 2005, is known for his modern American cuisine of using fresh, seasonal ingredients. Expected to begin in April, we’re going to go ahead and guess that you’ll want to book your reservations well in advance—this dining hot spot is sure to be perennially busy!
